I've made several batches, starting with 5 gal and find the receipe scales well. Don't worry too much about trying to find Wyeast 3056; just be sure to use a yeast with a dry finish - I've even had good luck with dry yeasts. This beer will ferment like crazy right down to a FG of 1.010.
